Cherry Walnut Chicken Salad

ingredients:

  • 4 cups cubed cooked chicken (rotisserie chicken is great for this)
  • 1 cup walnuts, toasted, broken into bite sized pieces
  • 3-4 ribs celery, diced
  • 1-2 tablespoons finely chopped red onion (more or less as desired)
  • 1 cup dried tart cherries (can sub dried cranberries)
  • 2/3 cup vegan mayonnaise or avocado oil mayonnaise
  • 3 tablespoons white wine vinegar
  • 1 chopped fresh tarragon or other herb of choice
  • salt and black pepper to taste
