Cauliflower Smoothie with Blueberries and Coconut

As much as I love to switch things up and try new recipes, I REALLY love my simple go-to staples. Most of us humans are creatures of habit, and having healthful meals and snacks on autopilot is the way to make this thing a lifestyle! The cool thing about this recipe is that the ingredients are very shelf-stable, and we could all use that in these grocery-store-avoiding days. Canned coconut milk, protein powder, chia seeds, and coconut oil are all items that last at least a month in the pantry or fridge, and the frozen items can be stocked up in the freezer and used in a variety of other recipes. Think: blueberry pancakes and cauliflower fried rice ;)

Cauliflower Smoothie?!

You may be thinking, “Cauliflower? In a smoothie!? That’s kind of weird..” But I promise it is one of the best ways to sneak some additional veggies in. Because cauliflower has such a mild flavor, you actually don’t notice it at all, which makes this a great smoothie if you’ve got picky eaters at home too! Cauliflower is a low-carb veggie, so it’s a great choice if you’re watching your carbohydrate intake or looking for a low carb smoothie recipe.
