Oven Roasted Salmon with Sriracha Lime Sauce and Miso Almond Broccoli

For most people, eating well is not going to happen if it feels difficult, time consuming or complicated. That’s why we love this recipe and recommend it to clients over and over again. It’s healthy, simple, quick and delicious. So basically, everything we’re looking for in a weeknight feast. Salmon is one of the best sources of both protein and omega-3 fatty acids out there, and if you get your hands on a nice, fresh piece of fish, you really don’t need to do much to make it the star of the show at the dinner table. Broccoli is a winner for lots of reasons, the first being its potential anti-cancer properties as a cruciferous vegetable. The second being that it’s generally loved by everyone, even picky eaters!

These recipes are all about the sauces. Sriracha lime sauce has just the right amount of heat, tartness and sweet flavor to compliment fish without overpowering it, and miso almond sauce adds interest to the broccoli with a little protein perk.

Sriracha Lime Salmon with Miso Almond Broccoli

ingredients:

For the Salmon
  • 1 1/2 lb. wild salmon fillet (skin discarded, or you can discard it after it's cooked)
  • Zest of 1/2 lime
  • Juice of 1 lime
  • 2 tsp sriracha
  • 2 tsp maple syrup
  • 1-2 tbsp cilantro, chopped
  • Sea Salt, to taste
For the Miso Almond Broccoli
  • 1 head of broccoli, broken down into bite-sized florets 
  • 1-2 tbsp extra virgin olive oil
  • 1 tbsp almond butter
  • 1 tbsp miso paste
  • 2 tbsp boiling or very hot water

How to cook Sriracha Lime Salmon with Miso Almond Broccoli

  1. Preheat oven to 425 degrees Fahrenheit
  2.  While the oven is heating up, whisk together the lime zest, lime juice, sriracha and maple syrup with a pinch of salt.
  3. Line a baking dish and one sheet pan with parchment paper and place the salmon in the baking dish. Pour 1/3 of the lime mixture over the salmon. Save the rest for serving. 
  4. Spread the broccoli florets onto the lined sheet pan and drizzle with olive oil, salt and pepper. Mix until evenly coated.
  5. Add the broccoli to the oven. After about 5 minutes, add the salmon to the oven. The broccoli should take about 20 minutes, and the salmon should take about 15 minutes (depending on thickness). When done, salmon should flake easily with a fork.
  6. While broccoli and salmon roast, mix the miso paste, almond butter and hot water in a small bowl until smooth.
  7. When the salmon and broccoli are done, remove them from the oven. Drizzle the almond miso sauce over the broccoli and toss until well coated. Serve the salmon, garnished with cilantro and extra sriracha lime sauce.
